Cilantro Lime Cauliflower Rice

Easy & simple riced cauliflower recipe that's keto, paleo, & whole 30. Low carb, clean, & delicious side dish that's also kid friendly.

- 1 T Olive Oil
- 4 cloves Garlic minced (4 t preminced)
- 2 24 oz bags Riced Cauliflower frozen
- 2 Limes halved
- 1/2 bunch Cilantro finely chopped
- Salt to taste
- Pepper to taste
Heat oil in large skillet over medium high heat. Add minced garlic & sauté 30 seconds.
Add cauliflower to pan & mix garlic in. Continue cooking over high heat until cauliflower is warm throughout & starts to brown slightly (10-15 minutes).
Remove from heat let cool for 5 minutes. Juice the limes into the rice. Add cilantro & stir to combine flavors. Season with salt & pepper to taste.
