Easy Tzatziki

Ingredients
  

  • 2 cups Plain Greek Yogurt full fat
  • 1 large Seedless Cucumber shredded (about 1 cup)
  • 2 T Banana Pepper Brine
  • 1 t Garlic Powder or 3 cloves pressed/minced
  • 1 t Dill Weed or 1 T fresh Dill
  • 1 t Salt
  • 1/2 t Black Pepper

Instructions
 

  • Line a small bowl with paper towels, doubled up. Shred the cucumber with a grater into the bowl. Using the corners of the paper towel, lift the cucumber up & squeeze out as much of the liquid as possible.
  • In a medium bowl, mix all ingredients together until well combined.
  • Enjoy!

Notes

  • Store in the fridge, in an air-tight container for up to one week.
  • If you do not have Banana Peppers on hand, you can substitute lemon juice or white vinegar for the brine.
  • I like the chunky cucumber in the sauce, but if you don't prefer that you can finish by putting the sauce in a blender until it is smooth.
