The Easiest "Baked" Sweet Potatoes

How to "bake" sweet potatoes in less than 30 minutes using a pressure cooker.

Ingredients
  

  • 3 lbs Sweet Potatoes whole, rinsed if needed
  • 1 cup Water
  • Butter or Coconut Oil optional
  • Cinnamon optional
  • Chipotle Powder optional, if you like spice

Instructions
 

  • Place steamer basket in the bottom of the Instant Pot. Lay sweet potatoes on top of the basket. Pour the water into the pot.
  • Cook on high pressure for 16 minutes - just remember "Sweet 16!". (*Check that the lid is sealed & not venting.) Release pressure when the timer is done & remove lid once pressure has fully released.
  • Carefully remove potatoes from pot - they will be hot! Serve immediately with butter & cinnamon. Chipotle is also optional for added spice.
  • Enjoy!
