Happy Cinco de Mayo!
If you have been following my blog on Instagram or Facebook for more than a month, chances are you have seen this one pan meal at least once already. These Chicken Fajitas make their way onto my table quite often because they’re so easy & the whole family loves them!
Let’s talk seasoning. You can always look for a fajita seasoning mix or packet from the spice aisle, but I recommend making your own seasoning so that it’s exactly what you want without anything extra.
My Fajita Seasoning recipe can be adjusted to your spice level by adjusting the cayenne. I suggest starting with a small amount because you can always taste test & add more if you prefer.
I always make a double batch of this Fajita Seasoning because it’s so handy to have around. I use it often when I’m making eggs, to quick saute the veggies for omelettes. Or I’ll coat some pinto or black beans with it to stuff inside some quesadillas or enchiladas. I’ve also used it on roasted sweet potato bites for breakfast burritos. I’d love to hear your ideas too!
The basic recipe, when made as written, is a healthy & balanced foundation for you to build on. Plus, it is Whole 30 compliant, which means it is free of: sugar, grains / wheat, legumes, dairy, & soy.
Now for the finishing touch! Time to add your favorite toppings & extras. Here are some things to serve with your Chicken Fajitas:
- Corn or Flour Tortillas
- Spanish Rice or Cilantro Lime Cauliflower Rice
- Easy Homemade Guacamole
- Shredded Cheese
- Shredded Lettuce
- Diced Tomato
- Your favorite salsa (I’m partial to Verde)
- Sour Cream or Plain Greek Yogurt

Sheet Pan Chicken Fajitas
Ingredients
- 2-3 T Olive Oil *see notes
- 1.5 lb Chicken Breast boneless / skinless, cut into thin strips
- 3 Bell Peppers your choice, I use red/yellow/orange cut into strips
- 1 large Red Onion cut into wedges
- 1 bunch Cilantro
- 2 Limes
Fajita Seasoning *see notes
- 1 T Chili Powder
- 2 t Smoked Paprika
- 1 t Cumin Powder
- 1 t Onion Powder
- 1 t Garlic Powder
- ¼ – ½ t Cayenne Powder ¼ = mild, ½ = medium/hot
- 2 t Salt
- 1 t Black Pepper
Instructions
- Preheat oven to 425 F.
- In a medium – large bowl, combine the chicken, peppers, and onions. Add olive oil and fajita seasoning; toss gently until chicken and veggies are evenly coated.
- Dump chicken & veggies onto the baking sheet & spread out evenly. Bake for about 15 minutes, until the chicken is cooked through.
- While it cooks, roughly chop the cilantro. Halve the limes, or cut into wedges if you prefer.
- Squeeze lime halves over the whole pan or serve with lime wedges. Top with cilantro & serve extra on the side.

Notes
- The amount of Olive Oil & Fajita Seasoning will vary depending on the size of your peppers & onion. If they are on the smaller side, start with 2 tablespoons of each. Add more as needed to coat all pieces evenly.
- The Fajita Seasoning Recipe will make more than is needed for this meal. Personally, I usually double the recipe & keep it on hand for various other dishes. Omelettes, breakfast burritos, burrito bowls, enchiladas, veggie tacos etc.

YES! THESE ARE SO GOOD! I got a little excited on the spices the first time and my poor toddler was a little shocked…. but the hubs and I loved it! I calmed down on the spices the second time and then it was a family pleaser! And a momma pleaser since I can prep ahead and then after work toss it on the pan and bake while I play with my girl!
