5 Ingredient Cheesy Ham & Egg Cups

- 24 slices of Ham 8 oz
- 8 eggs
- 1/3 cup Whole Milk
- 1 cup Shredded Mild Cheddar divided
- 3 Green Onions peeled & chopped
- Salt & Pepper to taste
Preheat oven to 350.
Using a standard muffin tin, line each cup with two slices of Ham. *See note about cooking spray.
In a medium bowl, whisk the eggs & milk together for 2-3 minutes until well combined.
Add the first 1/2 cup of cheese to the bottom of the ham cups. Pour the eggs in over the cheese; a 1/4 cup measuring spoon works well to scoop and pour.
After the eggs, add the green onions & the remaining cheese to the ham cups. Season all over with salt & pepper, to taste.
Bake for 18-20 minutes. Eggs should be set, with little to no jiggle.

- Cooking Spray - is an optional step before the ham. Some of the eggs will leak through the Ham into the muffin tin. Using a non-stick spray will make clean up easier but isn't necessary depending on what pan you use.
- Rotate the muffin tin half-way through baking for a more even bake.
