5 Ingredient Cheesy Ham and Egg Cups

These egg cups are so quick & easy to make! It’s a simple & straight-forward recipe which makes it adult & kid friendly.

Every time I test these egg cups, I try to improve the recipe. Mostly by adding more ingredients. But I kept coming back to ‘simple is best’. So I stuck with a short ingredient list & optimized the flavor I could get using those five foods.

Ingredients for the “5 Ingredient Cheesy Ham and Egg Cups”

The 5 ingredients include shredded cheddar, sliced ham, eggs, milk, & green onions. It all comes together in 30 minutes or less, and is a great recipe to make with your kids. The skills needed include: cracking eggs, whisking, pouring, and sprinkling. My Assistant Chef for this shoot was my 4 year old son, Roderick, & he loved helping.

Anytime I can get my kids involved in cooking is a win! Eating well & cooking for ourselves is an important life skill that I am passionate about teaching my kids. It’s an area where traditional schooling generally fails us so it’s one of my top parenting goals.

So, let’s get cooking!

The ham is a perfect outer cup to hold everything in. Well, maybe “perfect” is not quite the right word, since they always seem to leak a little. Doubling up on the ham slices slows down leaks but they still happen. So I guess they’re “perfectly imperfect”.

After lining the muffin tin with the ham, the next step is to whisk the eggs & milk together. This part is a little harder for the younger kids to help with since it can make such a huge mess. My Assistant Chef helped this time by pouring the milk in the eggs & then took an “in action” shot of me whisking the eggs.

Before adding the eggs to the ham cups, we sprinkled half of the cheddar cheese in the bottom of the cups. Then we used a 1/4 cup measuring spoon to scoop the eggs into the cups. Last step is to add the rest of the cheese & green onions, and then season to taste.

While they bake, I like to get the rest of the meal ready so that when they’re done, it’s all on the table together. 30 minute meals are so handy to have in your back pocket!

I typically make these egg cups as a ‘Breakfast for Dinner’ meal so the sides vary a lot. Here are some side dish ideas that I use often:

  • Smashed Sweet Potatoes with Butter & Cinnamon
  • Air Fryer Hashbrown Patties
  • Yogurt parfait with Berries
  • Side Salad
  • Baked Beans
  • Cherry Tomatoes. Raw or Roasted

Ingredients
  

  • 24 slices of Ham 8 oz
  • 8 eggs
  • 1/3 cup Whole Milk
  • 1 cup Shredded Mild Cheddar divided
  • 3 Green Onions peeled & chopped
  • Salt & Pepper to taste

Instructions
 

  • Preheat oven to 350.
  • Using a standard muffin tin, line each cup with two slices of Ham. *See note about cooking spray.
  • In a medium bowl, whisk the eggs & milk together for 2-3 minutes until well combined.
  • Add the first 1/2 cup of cheese to the bottom of the ham cups. Pour the eggs in over the cheese; a 1/4 cup measuring spoon works well to scoop and pour.
  • After the eggs, add the green onions & the remaining cheese to the ham cups. Season all over with salt & pepper, to taste.
  • Bake for 18-20 minutes. Eggs should be set, with little to no jiggle.
  • Enjoy!

Notes

  • Cooking Spray – is an optional step before the ham. Some of the eggs will leak through the Ham into the muffin tin. Using a non-stick spray will make clean up easier but isn’t necessary depending on what pan you use.
  • Rotate the muffin tin half-way through baking for a more even bake.
