This recipe is so easy that I’m confident you’ll have it memorized after making it just one time. All you need to have is a 3 lb bag of sweet potatoes, one cup of water, and an electric pressure cooker (like this 6 qt Instant Pot). And all you need to remember is “Sweet 16”.
To be totally honest – I hated sweet potatoes until I was nearly 30 years old. But I really hadn’t given them a fair chance. I never cooked them at home because “I didn’t like them”.
Then, I learned how nutritious sweet potatoes are while taking a dietitian’s class called “Eating the Mediterranean Way”. If you’re not sold on trying these orange tubers yet, keep reading to see why I am now their biggest fan & cheerleader.
Sweet Potatoes have numerous health benefits …
- Promoting good gut health. “The fiber and antioxidants in sweet potatoes … promote the growth of good gut bacteria and contribute to a healthy gut.” (Did you know that our ‘cravings’ are driven by our gut bacteria? So, really, we can control our cravings by controlling what we eat. How cool is that?!)
- Providing ample vitamins & nutrients including…
- Vitamin A (good for vision, bones, skin, immune system)
- Fiber (keeps you full without spiking your blood sugar)
- Manganese (for bone growth and increasing metabolism)
- Potassium (for muscle and brain function, and reducing anxiety and stress)
- Magnesium (increases fertility, cures migraines, and produces collagen)
- Fighting cancer. “Sweet potatoes offer various antioxidants, which may help protect against certain types of cancers.” The antioxidants “slow the growth of certain types of cancer cells … including bladder, colon, stomach, and breast.”
Plus – they’re basically fat free! So there’s zero guilt when you add some of your favorite “fat” of choice. I typically go for butter or coconut oil and add a little cinnamon. If you like spice – add some chipotle powder with the cinnamon. That flavor combination is savory, smoky, sweet, & spicy – SO good!
Let’s take a quick second to talk about how ridiculously easy this recipe is. This is basically it: load your instant pot with the steamer basket & potatoes, add the cup of water, & set to cook on high or manual mode for 16 minutes. That’s it! All you have to remember in the future is “Sweet 16”.

The Easiest “Baked” Sweet Potatoes
Equipment
- Pressure Cooker
Ingredients
- 3 lbs Sweet Potatoes whole, rinsed if needed
- 1 cup Water
- Butter or Coconut Oil optional
- Cinnamon optional
- Chipotle Powder optional, if you like spice
Instructions
- Place steamer basket in the bottom of the Instant Pot. Lay sweet potatoes on top of the basket. Pour the water into the pot.
- Cook on high pressure for 16 minutes – just remember "Sweet 16!". (*Check that the lid is sealed & not venting.) Release pressure when the timer is done & remove lid once pressure has fully released.
- Carefully remove potatoes from pot – they will be hot! Serve immediately with butter & cinnamon. Chipotle is also optional for added spice.
- Enjoy!
