This side dish is one of my favorite go-to’s when I’m making any Mexican inspired dishes like my Sheet Pan Chicken Fajitas or Verde Chicken Chili. It’s so quick & easy to make, with only 5 ingredients (plus salt & pepper). Plus it’s grain-free, sugar-free, paleo, keto, & whole 30 friendly, which means it’ll make your body feel good!
How to Make Cauliflower into Rice
Honestly – I just buy it already riced because it’s so much easier & doesn’t create more dishes. Aldi (& most other grocers) sell bags of “Riced Cauliflower” in the frozen foods section. “Real talk” … being a food blogger without a dishwasher means I sometimes take shortcuts to make things easier on myself. It’s all about balance!
If you want to make the rice yourself, you’ll need a food processor or a large cheese grater. With either method, you’re going to shred the cauliflower into small rice-sized bits. Cutting the head into quarters before shredding will make the process easier.
Since the recipe was written using frozen riced cauliflower, fresh cauliflower will reduce the cook time needed. The total time will be about the same, with more prep time & less cook time than the original recipe.
Can I use frozen riced cauliflower?
Yes! This recipe calls for frozen riced cauliflower. No need to process it yourself unless you can’t find the frozen stuff for some reason.
What to serve with Cilantro Lime Cauliflower Rice?
So many options, where do I start?! I use this rice in my Pork Carnitas Bowls. It pairs very well with these easy Sheet Pan Chicken Fajitas for a clean, whole 30 approved dinner. Cilantro Lime rice is a good side dish to enchiladas or tacos or put it right in the tacos!

Cilantro Lime Cauliflower Rice
Ingredients
- 1 T Olive Oil
- 4 cloves Garlic minced (4 t preminced)
- 2 24 oz bags Riced Cauliflower frozen
- 2 Limes halved
- 1/2 bunch Cilantro finely chopped
- Salt to taste
- Pepper to taste
Instructions
- Heat oil in large skillet over medium high heat. Add minced garlic & sauté 30 seconds.
- Add cauliflower to pan & mix garlic in. Continue cooking over high heat until cauliflower is warm throughout & starts to brown slightly (10-15 minutes).
- Remove from heat let cool for 5 minutes. Juice the limes into the rice. Add cilantro & stir to combine flavors. Season with salt & pepper to taste.
- Enjoy!
